It’s well known that American Arts & Crafts furniture made from white oak was darkened with ammonia fumes. Of course, you’ve got to do this outdoors! I believe it’s done by making a small plastic tent to concentrate the ammonia gas but don’t quote me on that. It’s possible many oxidizing acids in water would do the same thing.
