I would put it together and finish the project. At the final sanding I would evaluate and fill then if needed. I would use a store bought filler that hardens and close to the finish color and only where extremely necessary. It was built by hand small imperfections can add to a project like that depending on your mindset. To put my advice in perspective I am kinda new at this. That is what I would do though.
