Full width tenons

I have noticed that some make tenons the full width of the board; and, some make tenons that are cut perpendicular to the face (or parallel) to the cheeks. Sorry everyone use different terminology. Regardless of what terminology, the tenon is cut to a width less than the board width. Why would one choose one over another….Thank you in advance!
