Modified trestle table – question about end grain against apron

I was thinking about changing the dimensions slightly and putting a long, end grain butcher’s block (not oak, of course) on top of this trestle table. The end grain presents a problem, though. Since wood expansion/shrinkage is now mostly occurring perpendicular to the ground and the screws of the turn-buttons would be going through end grain on the underside, which isn’t particularly strong, what joinery makes the most sense for attaching end grain to a table apron? I thought about it like two sideways breadboards on the ends of a normal table, with long mortises in the tops of the aprons and tenons on the underside of the tabletop, but I have the unshakeable feeling I’m overthinking it and there’s a much simpler solution. I’m also worried that the tenons will swell up every time I wash down the butcher’s block and it won’t be easy to disassemble without waiting a long time for them to dry out.
