Thanks for all the posts. So I went and took a much closer look at it and figured out the issue. I took a short video so you can hear the noise:
I also figured out a fix. I’ll post what I did, either for critique or posterity in case someone else runs into the issue.
The chattering wasn’t being caused by the split nut (which I assume is the plate with the threads that is moved up and down by the quick release mechanism).
It was actually the housing for the rods and the screw. There was very little clearance around the screw and the edges were very abrupt and hard. Looking at the pictures from the post Craig linked to, it seemed like the older vise had more clearance around the screw. I took this picture today, I think it shows the tight clearance on mine.

Using a rounded file, I beveled the openings of the screw housing and then cleared enough inside it to allow for the tiny bit of slop the screw has. While working on it, I occasionally put it back together and tested it to see if I was making progress and it seemed like I was so I kept going.

I’m pretty happy as this is my first bench and I finally finished it today.
