I don’t know about the swhoosing sounds – I’ve sometimes been surprised at how much my planeing sounds like it does to Pauls vids.
As far as your saw sharpening goes; Paul’s vid shows how to sharpen for a rip cut in that the file is at 90 degrees to the blade so in effect the front of each tooth is flat. Paul mentions a fleam cut blade in one of the vids which if I remember correctly is designed for cross cutting. Each tooth has the front and back angled to form a small blade. It sounds like this second type is what you are describing.
There’s a nice explanation of it all here: http://www.blackburntools.com/articles/saw-tooth-geometry/index.html
I’ve been trying out Paul’s method on my old saws and it has breathed new life into them. I only had a standard cheapo tri square needle file to sharpen with and it worked fine (I’m actually waiting for delivery of a Bacho saw file as I type this). I got hold of a saw set on ebay.
I wouldn’t use a $300 saw as something to practice on. Why not get hold of a bargain on ebay and have a go with that? It doesn’t need to be pretty – just something you can work on without worrying about how much it costs to replace.
