I used a vintage table saw and a thickness planer to dimension the 6/4 walnut, maple, and mahogany for this end grain cutting board. My bench plane did all the jointing. I do not believe a power jointer would have produced better results.

I think you are referring to a power planer (thicknesser) not a jointer but in this instance you wouldn’t use such machinery for this task as it would tearout the grain. I guess if you were to set the machine to plane 1/32 with each pass you could get away with it but if you were to use machinery the choice for this task would be a drum sander or a hand held belt sander. However hand planes is always the better option and you executed that very well.
