Correct gouge bevel

Hello everyone,
Ive recently ordered 2 Faithfull gouges and they both have an exceedingly steep bevel: 45°. It makes it difficult to shape spoon bowls.
Does anyone have some useful advice in how to correct the bevel to something more useful or to change my technique to make use of the bevel?
I found that it helps to reduce the belly of the bevel, the deepest part of the bevel, allowing a shallower cutting angle. The actual sharpening angle is probably around 20 degrees for softwoods and 25 degrees for hardwoods, a bit steeper for each if you are striking it with a mallet. If you find the edge rolling or crumbling, go to a higher angle.
