Gluing the panels first?

I know in the videos Paul waits until the final assembly to glue the two panels together.
Is there any reason the panels can’t be glued together as one of the very first steps, before cutting any of the joint parts?
I have seen other videos of people making breadboard end tables and the panels are always glued together first. Just wondering what the reasoning was in not gluing them up first?

That’s fine. It works to plan ahead. But on the original board the two panels were not glued along the joint line because we are talking almost 200 years ago. I am not even sure if the best thing is to glue the joint line really. I have made them without doing that and offsetting the hole as we talked about does ensure that the joint line always remains tight both against the shoulder line and also the length between the two halves.
