Leather in vise jaws?

Paul has only one side of his vise with leather, and even that he has so he can flip it out of the way. I’m curious: why? Why not just line both vise jaws with leather?
You only need the leather on one jaw so I suppose it’s reducing the amount of leather you need to get hold of. Don’t forget, you’ll have to replace it from time to time. As for flipping it out of the way; I’ve always assumed this is for times when you need to hold something in the vise that might damage the leather. I don’t like planing rough stock in the vise with the leather in place for example.
