<Any suggestion on the best way to mortising a thru 3 1/2 square mortise in white ash
Tom Fidgen drills out most of the waste. Paul Sellers chops and he says he uses mortising chisels for largest mortises – this may qualify.
I would think practicing in a piece of waste would also give you a feel for how the wood and your tools will respond to the mortise work. I’d try both methods and chose what works best.
I have done a few mortice’s, just finished Paul Sellers style bench and chopped them out like Paul showed and was happy with results. Make sure you have a sharp chisel.

Ash is pretty hard stuff just take smaller bits and be patient.
I do not like drilling method Although I use it to fit mortise locks.
