Panels for cabinet project

In one of Paul’s projects he uses 5/8” wood for the panels and planes a bevel on the outside edge to fit the groove. On his bedside table project he uses 7/8” wood and puts a rebate on the inside and planes a bevel on the outside to fit the groove. Is this just a matter of style or are there reasons for doing in one way or the other?
Actually, it’s the other way around. He wanted the rebated side to be his outside “look” and that’s a style choice. The bevel is used in this case mainly as the method of properly fitting the panel.
