Polyurethane Varnish a plastic wrapper?

    Hello all,
    I was just wondering if finishing a project with Polyurethane varnish be the same as wrapping timber in plastic, would it stop expansion and contraction in say for example a dining table top?
    Any thoughts anyone?

    In his book “Taunton’s Illustrated Guide to Jigs & Fixtures” Mr. Sandor Nagayszalanczy states on page 43 that wipe on polyurethane gel is good at mitigating humidity related changes in wood. Then also, polyurethane varnish is frequently used on boats; with the usual conflicting subjective, anecdotal, evaluations.

    Fine Woodworking was quite positive to MinWax wipe on polyurethane gel.
