Which end is up?

If someone hands you a piece of milled material, a peek at the end grain or aspects of coloring often let you know which direction was towards the center of the tree and which was towards the exterior. Is there any way to know which part of the timber is towards the roots and which is towards the crown / canopy?
A video with a Japanese woodworker discussed how he likes to orient his material according to how it was grown (up vs. down), and it made me wonder, how does he know? How can he tell?
